On the nose, it smells of sweet pepper. On the palate the pink peppercorns of Madagascar delivers hot and sweet bitter flavors. Our berries are whole and with a shimmering pink. We do not sell broken berries.
The pink berries or pink peppercorns are native to South America. There are two species that are "Schinus terebenthifolius" and "Schinus molle". It is a tree that can reach fifteen meter high that was introduced by the Creole settlers and grows on the east coast of Madagascar. For practical reasons, the tree is limited to three meters. The bunches of berries will become more and more pink by maturing. They will then be harvested, dried and manually ground.
The pink berries of Madagascar are used more in final touch than during cooking. Spend a little pink berries with the mill on your preparations and the magic operates ... They marry with most food with a foodness for the products of the sea and will bring a nice touch of color to your plates. Pink Peppercorns are very often used for the preparation of 3 or 5 berry mixes.
